

Yirgacheffe - Two Ways
Coffee from Yirgacheffe, Ethiopia, is often considered a gateway for many of us who become enthralled with specialty coffee, due to its often unconventional, smooth, mellow, sweet, and tea-like characteristics. This blend aims to capture that: delicate, floral, smooth, and mildly sweet. This filter coffee is your cue to slow down, relax, and enjoy the subtle nuances of life. We taste black tea, with milder juicy notes of grape and berry, finished with an almond-like finish. Appropriate for filter coffee and immersion brewing, we recommend enjoying this coffee black, as the washed and natural blend offers a well-rounded, approachable experience.
Sourcing & Process
Both of these coffees originate from a network of family-operated farms that utilize the Kochere coffee mill, in the town of Kochere within the Yirgacheffe District of Ethiopia. Purchased from Matewos Ersemo and his family, the components of this blend are a culmination of ripe coffee cherries sourced from neighboring smallholder farmers. While the same coffee is used, they are treated quite differently. The washed coffee is immediately de-pulped and fermented for 36-48 hours before being dried, while the natural component is dried in the cherry slowly over several weeks on traditional African beds, being meticulously turned every few hours.
